Chocolate Eclairs

Eclairs are traditionell French pastries and offer a decadent taste of crisp choux pastry oozing with delicious cream and topped with Easy Icing Chocolate - La vie est belle!

for the recipe Chocolate Eclairs

For the Pastry:

1 cup water , 250 ml
125 g butter
1 cup plain flour , 150g
4 large eggs

For the Whipped Cream:

300 ml thickened cream
2 tbsp icing sugar
1 tsp Queen Vanilla Bean Paste

To Decorate:

Dr. Oetker Easy Icing Chocolate , 2x




For the Pastry:

Pre-heat the oven to 210°C (190°C fan oven, gas mark 6) and line two baking trays with baking paper.


In a medium saucepan over a low heat, bring butter and water to the boil.

Remove pan from heat and add flour. Using a wooden spoon, stir mixture until it comes away from the sides of the pan and forms a ball.


Transfer dough to the bowl of stand mixer fitter with the whisk attachment. With the mixer on medium speed add eggs one at a time, beating well after each addition. Continue beating until mixture is thick and glossy.


Spoon mixture into a piping bag fitted with a large (2cm) round nozzle. Pipe 8cm ropes onto the baking paper leaving at least 3cm between each one.


Bake for 30 minutes until puffed and golden. Transfer to a wire rack to cool.

For the Whipped Cream & Decoration:

Once the pastries have cooled, whip cream, icing sugar and Vanilla Bean Paste to firm peaks. Fill eclairs with cream and prepare Easy Icing as per pack. Top the Eclairs with Easy Icing Chocolate.
