Vanilla Cupcakes to Decorate

For the Cupcake:

110 g unsalted butter (room temperature)
180 g caster sugar
1 pinch salt
250 g plain flour
1 tsp baking powder
140 ml milk
2 eggs
2 tsp Queen Vanilla Bean Paste

For the Buttercream:

250 g unsalted butter
3 cups icing sugar
1 tsp Queen Vanilla Bean Paste
Dr. Oetker Gel Food Colour , as desired
2 tbsp milk

Preheat oven to 160C fan- forced.

Mix and sift all dry ingredients together (sugar, flour, Baking Powder and salt) in a large bowl.

Add butter and start mixing on low speed and then turn to high speed. (Mix for 30 seconds)

Add wet ingredients (eggs, milk and Vanilla Bean Paste). Beat for 40 seconds.

Line a muffin tin with 12 cupcake cases. Bake for 20-30 minutes or until a cake tester or skewer comes out clean.

Stand cakes in cases for 2 minutes. Transfer to a wire rack to cool

For the Buttercream:

Add butter in the bowl and beat on medium speed using a paddle attachment, until light and fluffy.

Add ½ the icing sugar and beat on low speed until combined.

Add Vanilla Bean Paste, milk and remaining sugar and desired amount of Dr. Oetker Gel Food Colour. Beat on low speed until combined. Increase to high speed and beat until mixture is fluffy.

Decorate the cupcakes with the buttercream using a star nozzle.
